Juliet Corson's first cookbook was "The Cooking School Manual of Practical Directions for Every-day Cookery," based on her New York Cooking School; her point was that nutritious meals could be made without great expenditure; as she poses in the Manual, "How well can we live, if we are moderately poor?" It was followed by a pamphlet, "Fifteen Cent Dinners for Families of Six," was needfully popular during the Great Strike of 1877. Corson made her classes available on a sliding scale so that both the well-to-do and the poor could attend. She was the organizer of the New York Cooking School exhibit at the 1893 World's Fair Columbian Exhibition in Chicago, on which this book is based. Covers worn, lightly soiled. Front hinge cracked, rear cover and backstrip detached from bookblock. Pages age-toned, brittle. First few pages detached, laid in. Frontispiece has small closed tear in margin, not affecting image (portrait of Juliet Corson). Block sound.
